Does life seem to be a little too ordinary at times?  Do you often wish you could just fly away to an exciting destination where time and life just seems to stop and complete rest begins?  We really don’t have to go very far to experience rest, in fact, it may be closer than you think!  One of my most cherished memories is being with family, friends and eating delicious, made from the heart, special fare.  Today was such a day as I took time out from the demands of the day and headed on over to a little Greek sidewalk café in the heart of Florida.  Bistro tables, fresh greenery and the warm soothing air of a Florida day was just the rest I needed.  The menu today:  warm cup of pomegranate tea, Falafel wrap, and Greek salad.  Just the right touch to lift one’s spirits for the day ahead.

  • Chickpeas
  • 1 onion finely diced
  • 3 tablespoons fresh parsley finely chopped
  • 1 glove garlic crushed
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • 2-4 tablespoons flour
