Before the humidity hits I always like to find a breezy restaurant patio to take in the beauty of blue skies, warm sun, and great food. On one such occasion, I dined with a wonderful friend. As we caught up on each other’s lives, I couldn’t help but feel blessed and surrounded by beauty. The warmth of our conversation, along with an incredibly well presented lunch, was simply refreshing.
You can create that same ambiance and warmth in your own backyard! Invite a friend for a light lunch on your patio, porch, or by the pool. Create an inviting table for two with your prettiest light linens and dishes. One of the best memories I have as a child is the smell and feel of my moms newly washed sheets, dried by a summer breeze. Bring back the memory by placing a sun dried fresh sheet over the table where you will be dining. Choose one that billows on the ground softly at your feet. Add a few candles and flowers from the garden and serve a light fare such as Crab Cakes, Caprese Salad, and freshly squeezed lemonade and you have created a warm, breezy summer escape right in your own backyard.
Crab or Salmon Cakes
2 cups fresh crab or salmon meat (can also find canned salmon on the grocery isle if needed)
1 1/2 cup gluten free bread crumbs or Italian breadcrumbs
1/2 cup light mayo
1 large egg
1/2 teas. salt
1/4 teas. fresh cracked pepper
1/4 cup canola oil
Mix crab cake filling together gently and form patties. Place patties in medium size pan with 1/4 cup of canola oil and saute until light brown and somewhat crispy. Serve with Caprese Salad
2 large tomatoes
1 lb. Mozzerella Cheese
Fresh Basil Leaves
1 tbls.Balsamic Vinegar
1 tbls. Olive Oil
Salt and Pepper
Alternate stacking tomatoe, mozzerella and basil and drizzle balsamic vinegar and oil over the stack. Delicious!
