Irresistable Idaho Potato Pancakes

A sweet friend of mine just came back from a trip to her home state IDAHO!  What’s so cool about this is that her family owns a 400 acre farm and grew these amazing potatoes!   She brought them to me in a plastic bag this morning, and the first thing I did was smell them.  I could smell the fresh dirt as if I dug them up myself.  There is nothing like the smell of fresh produce!  One thing she told me that  really warmed my heart was that her daddy (in his 80’s) joined her in the field to dig up these wonderful potatoes.  He has been struggling recently  with his health but wanted to share this moment with her.  So, they made the trek together searching out acres of these fine potatoes. The picture of them together out in the field was priceless  and refreshing to her spirit!  Now she has come to refresh us…   As I sat in my office and poured over the day’s meetings and emails, I didn’t expect this kind of refreshment to come.  A potato!   Now I want to bless you with a popular and most favorite recipe “Potato Pancakes”.  Delicious and cultivated for your refreshment!

  • 4 HUGE Idaho potatoes cooked and mashed potatoes
  • 1/2 cup chopped Vidalia onion
  • 1 egg
  • 1/4 cup flour

Mix all ingredients together. Pour a couple of tablespoons of olive oil into a pan on med heat.  Using a scooper drop a heaping scoop of mixture the frying pan.  Cook until both sides are brown about 5 minutes.   Serve for breakfast, lunch or dinner!

For an everyday gourmet touch add some color by chopping a red pepper very thin along with some parsley…gives it a touch of color and panache!

Arrange on a pretty plate and serve with strawberries.idaho potatoes
